My favorite watermelon salad

Watermelon and summertime go hand in hand, like running thru sprinklers, catching fireflies and picnics with friends.

Most of the time you see it served as sliced wedges, but have you ever tried watermelon salad?

It is so refreshing. I think it is the perfect mix of sweet and savory.

I had stumbled across the recipe many years ago and was on the fence.
Once I mastered the balance of flavors that worked for me, it quickly became my favorite summer salad.

This recipe is so easy to make!

It is so refreshing on a hot summer day.

I hope you love it as much as I do.

Ingredients

  • 2 cups watermelon pieces cut in bite sized pieces
  • 1 small shallot or cippolini onion
  • 2 ounces feta cubed
  • 2 teaspoons balsamic glaze
  • ¼ cup chopped mint

Once you have all the ingredients, we can get this salad mixed up pretty quickly!

Start by chopping your watermelon in to bite sized pieces and transfer it to a large bowl.

Then thinly slice your shallot (or onion) and sprinkle it on top of the watermelon

Next you will chiffonod your mint leaves (roll them up and slice them) and sprinkle them on top of your watermelon.

I used balsamic glaze in my watermelon salad. It is a bit thicker than balsamic vinegar, but you can substitute if you prefer.

Add 2 tables spoons of balsamic glaze and gently toss the ingredients together.

Let the watermelon salad sit for at least an hour.

If you can let it sit overnight it really gives the flavors the chance to marry together.

The sweet watermelon infused with balsamic glaze and a bit of brightness from the mint is PERFECTION.

When you are ready to serve the watermelon salad, top it with a bit of crumbled feta.
The salty & sweet combo is divine.

You can toss the watermelon salad over greens like arugula or a spring mix.

Or eat it by the bowl full.

Either way it is DELICIOUS.

You can also add 1/2 cup of fresh strawberries

or 1/2 cup seedless cucumbers to change things up.

I love to make a giant bowl, because it gets gobbled up so quickly.

    1. You can change the amount of onions, or even change up the type like using purple onions.
      If you thinly slice them, and let the salad marinate for at least an hour, the flavors all come together nicely.
      Whenever I make it for friends, they are shocked, LOL.
      Onions, mint, watermelon mixed together?

      You can play with the recipe, too. Add strawberries or cucumbers and server it over arugula.
      It gets addictive. A giant bowlful never lasts long at my house!
